Caca Milis - It's cake time!

One of the things I really love to do (and it's great to pass the time) is baking! In the horrid economic times we're all in at the moment, it may be difficult to afford great Christmas presents for family and friends. My idea? Bake them a cake or some cookies. It's personal, edible and most of all a sweet, cheap gift. Here's one of my favorite cake recipes  The original is from BBC Food but I've edited it to make it easier for myself and others and also a little less rich. It's also flour free!





Ingredients:

  • 4/5 eggs
  • 100g ground almonds
  • 140g chocolate (I've used Milka, Cadbrys and giant Areos too. Choose your favorite!)
  • 85 grams of castor sugar 
  • Pinch of Salt
Steps:

Steps 1,4,6 and 8 respectably 

  1. Separate the eggs - whites in one bowl, yolks in another. 
  2. Melt the chocolate over boiling water 
  3. Whisk the egg whites, gradually adding the castor sugar until stiff
  4. When chocolate is fully melted, add ground almonds gradually until the chocolate has soaked all the almonds
  5. Add the egg yolks to the chocolate/almond mixture
  6. When egg whites are stiff, fold then slowly into the chocolate mixture
  7. Line tin with greese proof paper or butter/marg. 
  8. Cook in the over at 150 degrees for 35-40 mins
  9. Serve and enjoy!




You can also make the cake with a chocolate center (see above) by baking it in two separate tins/one tin and cutting it in half and then adding a chocolate sauce. Chocolate sauce can be made by melted chocolate and adding a small amount of cream.
Top tip - don't use 85% cocoa unless you like chocolate that bitter. I personally think it's horrid!

I'm never too precise with what I bake and I like to make changes here and there. I'm also not to particular with measurements - life's too short. Baking about enjoyment!
